Not asking if they will be greatest ever. I think we all agree this is a bit of a down year across the board.
But each team will have won their conference and the champ will have beaten 2 other major conf champs.
So will this make national champ this year most accomplished to date?

09 Bama had one of the highest margins of victory ever

Record number of All-Americans
Heisman winner
Beat the previous FOUR national champions, with 9 points being the closest margin in any of those games.

IF Alabama was to win, their resume would be:
14-1 record
Played 12 bowl teams
Played 8 ranked teams
Defeated 3 top 5 teams
Defeated 4 10+ win teams
Cumulative opp record 120-75 (assuming SEC opps go 5-5 in bowls & UO beats FSU in semi-final)
For frame of reference, 2009 Alabama:

Played 6 ranked teams
Defeated 2 top 2 teams
Defeated 3 10+ win teams
Defeated two BCS bowl teams

2011 LSU (I know, not national champs but Hell of a season):

Defeated 3 BCS bowl teams (UA, WVU, & Oregon)
Cumulative opponent record: 113-65
1995 Nebraska:

Played 4 bowl teams (only 18 bowl games)
Played 4 ranked teams (all top 10 teams)
Defeated 4 10+ win teams (by an avg of ~31 ppg)

Considering you let an arkansas team that had lost 15 conference games in a row out rush you 89 to 66, out pass you 246 to 161, out total yards you 335 to 227 and have 18 first downs to your 10. Not no, but HELL NO.

Some of the champs/close calls from the '80s would be high on this list: '83 Auburn, '87 Miami, '88 Notre Dame, etc.

The biggest thing Florida State will have going for them if they win the NC, is that they'll be on a 31 game win streak and be back-to-back champions. That's not a very quiet accomplishment. That said, some stats you didn't list show that they're somewhat of a weak team.
They've played 13 games thus far, and have won 7 of the 13 by a score or less, including the last four games in a row. Their two point win over a 10-3 Georgia Tech team and a four point OT win over a 9-3 Clemson team (at home) are understandable. Ugly and unimpressive, but understandable. The six point win over a 6-6 Oklahoma State, four point win over a 6-6 Miami, five point win over a 7-5 Florida (at home), three point win over a 7-5 Boston College (at home), and four point win over a 7-5 Notre Dame (at home) are not understandable. Also factor in they had to come back from 0-21 for an underwhelming 11 point win against Louisville.
No accomplished national champion should have so many close calls against such inferior competition. This is actually the reason I'm thankful that a playoff is now in order. I don't feel Florida State is any different from Notre Dame two years ago. They coast by on a mostly weak schedule, playing too many games far too sloppily.

Irrelevant to the OP's question.
I don't know how you compare a team with a loss to an undefeated team in terms of "accomplished". After all those stats about the opponents, how do you factor in the Ole Miss loss?

No, they didn't. They would have won 15 games and a NC. Hence "This year's national champ". 2013 has nothing to do with 2014.
You're arguing something different. This year alone, their resume isn't that impressive compared to some other teams. An Alabama or Oregon championship would be much more "accomplished" in almost every measurable way.

Oregon and Alabama played far, far superior competition, too. This isn't even remotely debatable.
If record is all that matters to you, cool. But it's not the only measure of a team's accomplishments.
