Pro Bowling uses different oil patterns for every tournament. The oil pattern at your average bowling alley on any given night is called a “house pattern” and they are pretty much the same everywhere. These pro bowlers would find it boring to roll on those patterns and it would be boring to watch as well. The oil being different lengths and shapes means these guys have to use a crap ton of skill and are always being faced with something new, hence the lower scores.
ETA: The oil being different shapes and lengths changes where the ball will “grip” (for lack of better word) and start to break in its curve.
